Verser le lait froid en m\u00e9langeant bien. Poivrer, saler et ajouter la muscade. Laisser cuire et \u00e9paissir 10 minutes. Ajouter le gruy\u00e8re r\u00e2p\u00e9, m\u00e9langer pour le faire fondre, puis, hors du feu ajouter deux jeunes d&rsquo;oeufs. <\/li>\n<li> M\u00e9langer les \u00e9pinards et la b\u00e9chamel. <\/li>\n<li> Incorporer le blanc d&rsquo;oeuf battu en neige avec une pinc\u00e9e de sel. <\/li>\n<li> Pr\u00e9parer la pur\u00e9e de carotte : \u00e9plucher les carottes et pommes de terre. Mettre les carottes \u00e0 cuire 40 minutes dans de l&rsquo;eau bouillante sal\u00e9e. Ajouter les pommes de terre 20 minutes apr\u00e8s. <\/li>\n<li> \u00c9goutter et passer les l\u00e9gumes au presse pur\u00e9e. Ajouter la cr\u00e8me fra\u00eeche, le parmesan, les jaunes d&rsquo;oeufs, le blanc battu en neige, assaisonner et m\u00e9langer.<\/li>\n<li> Pr\u00e9chauffer le four thermostat 7 (210 \u00b0C) Beurrer un grand plat et disposer les deux pur\u00e9es en les alternant.
