Aplatissez-les le plus possible \u00e0 l\u2019aide de la lame d\u2019un grand couteau.<\/li>\n<li> Coupez douze tranches de mozzarella.<\/li>\n<li> Lavez, s\u00e9chez et effeuillez la sauge.<\/li>\n<li> Pressez le jus du citron.<\/li>\n<li> Sur chaque escalope, disposez deux tranches de mozzarella, une feuille de sauge, salez et poivrez. Roulez les escalopes sur elle-m\u00eame en les fermant \u00e0 l\u2019aide d\u2019un pic en bois.<\/li>\n<li> Coupez six feuilles de papier sulfuris\u00e9 de 15 cm de long sur 10 cm de large. Posez chaque roulade d\u2019escalope sur une feuille, arrosez-les d\u2019un filet d\u2019huile d\u2019olive, salez et poivrez.
