Couper les chipirons en d\u00e9s et passer le s\u00e9pia dans un tamis avec un peu d&rsquo;eau. <\/li>\n<li> Faire revenir les morceaux de chipiron et l&rsquo;oignon dans un peu d&rsquo;huile, faire flamber avec l&rsquo;Armagnac et le vin blanc. <\/li>\n<li> Lier avec la farine, ajouter l&rsquo;encre. Assaisonner avec le sel, le piment d&rsquo;Espelette et le bouquet garni. <\/li>\n<li> Laisser mijoter au moins 30 minutes. <\/li>\n<\/ul>\n<table>\n<tbody>\n<tr class='row_even'>\n<td><img
