Quand le m\u00e9lange arrive \u00e0 100\u00b0C commencer \u00e0 battre les blancs d&rsquo;oeufs et la pinc\u00e9e de sel en neige. Quand le m\u00e9lange arrive \u00e0 123\u00b0C, le faire couler en filet sur les blancs d&rsquo;oeufs.
